CO₂ for breweries
CO2 is indispensable for the brewing of beer. Both with the filtration, saturation, bottling and pumping of the beer as well as the purification of washing water, carbon dioxide is used.
Process
During the brewing and filling process is CO2 added at various places:
-
at the filtration as propellants to press the beer through the filters
-
with the saturation to bring the beer at the desired CO2-concentration
-
with the bottling to avoid unwanted foaming
-
When pumping from the storage tank to the tank truck or vice versa
-
with the purification of the washing water (neutralisation of the alkaline solution)
Requirements
IJsfabriek Strombeek provides in addition to CO2 also all the necessary equipment for its use during the brewing process.
Because the volumes of CO2 are quite big a storage tank is required. The content of this is adapted to the consumption of the customer. This tank is equipped with a telemetry system to make automatic deliveries possible.
The used CO2 is gaseous, for this an adapted evaporator must be fitted. The energy for this can be either electricity, steam or hot water. After the evaporator filters and pressure regulating equipment is fitted.
For water treatment a pH measuring device is required.
Advantages
-
CO2 is an authorised food additive (E 290). It provides for the typical lightly sour and prickling flavour.
-
The overpressure of the CO2 prevents the infiltration of oxygen.
-
The tank and telemetry shall ensure that the customer will always have sufficient stocks of CO2. The dosage can be fully automated.
-
CO2 in water treatment is an ecological and cost-effective alternative for neutralisation with strong mineral acids.
